Maeterlinck's is awesome (Maurice, i.e.-- same who wrote the Bluebird and other Modernist plays) and is surely the foundation of many more 'scientific' books about bees.
Hard to find, though most University libraries possess a copy. Highly rec.

If you are looking for something more academic, look for Michener's Bees of the world in libgen
It's a pretty fucking huge book as it includes identification keys for all the families and a shitload of genera, but the first ten or so chapters talk in depth about different characteristics of the group as a whole (think life cycles, distribution, anatomy, etc)
