I'd start by cooking the potatoes first in that case, or doing them in batches
I usually do mine using leftover fries, or if I'm feeling extra fancy, I'd oven roast the potatoes first and then finish them up on the pan along the rest of the ingredients

Actually I think it would have been fine if I just used less potatoes
Some of the potatoes did brown a bit so if I had used slightly less I could of got a nice brown on them all and much nicer flavour

Nice OP. I also made a potato and onion frittata today although I start mine on the gas and then transfer to the oven and finish it under the broiler if I have some parmesan which I didn't today unfortunately.
This is very different from quiche. There is no pastry here and it can be done very quickly.
