Am I wrong for finding the concept of putting cheese on fish disgusting? I almost want to try it, because I love tuna sandwiches and want a new way to enjoy them, but I can't get over the idea of cheese and fish....people like this?

Tuna melts are top tier diner food. This or club sandwich.

I like pie made with crabsticks and shrimp, but I feel fish is better as filet or patty/balls/sticks.

It does seem weird, I admit. It did to me to. But honestly tuna melts are pretty awesome in a way you wouldn't expect. No harm in giving it a try friends. Also I liked putting a little bit of steak sauce on it too

Also, as regards cheese on seafood pasta, I saw Pepin do a linguine and clam sauce and grated parmegiano over it. He said he knew it was heresy in some quarters but he didn't care because he liked it.

Couldnt agree more, I work with some fucking wops that always say "fish and cheese?! whassamatta you!" Its completely retarded to have this stereotype that 2 things of such wild variety in terms of texture and taste, not to mention region and process of cooking/aging, would always be bad together.

I made a shrimp fondue for staff meal once because we had a pile of small shrimps kicking around that were too small to serve to paying customers, and the wops didn't even try it, meanwhile that pot is being literally licked clean by the dishwasher because it was fucking amazing.

20th Century America seemed to embrace the idea that cheese goes with everything. Most fast food items today have "with cheese" as the default. I think that's silly. Cheese does not improve everything. Fish is a great example. Whether or not cheese goes with fish really depends on the kind of fish you're eating. Smoked fish goes well with cream/farmer's/quark cheese, but its flavor would conflict with any stronger tasting cheese. Bottarga goes well with grated sharp cheese over pasta. Anchovies work on pizza with fresh mozzarella, but aren't as good with low moisture cheese. Though people do it I would argue that cheese does not really add anything to tuna salad or fried fish fillets, so it ought to be left out of those sandwiches. Not because it's "wrong", but simply because it's gilding the lily.
