gyro hack:

For 3 XL tortilla wraps I used 1 drained can of chickpeas (I prefer kidney beans but I just had chickpeas), 250 g regular mushrooms (the cheapest ones), half of a huge onion and 3 tbsp olive oil.
The raw part was a couple leaves of iceberg per wrap (finely chopped), a drizzle of vegannaise, no onions because I ran out (but they do fit the flavour profile if you have them), and the senap grov mustard from ikea.
If I did it again I would put a tiny bit of raw onion slices and just use a regular sour but non sweet mustard - this one from ikea goes better with neutral tastes like dogs or tofu, and this wrap is all but neutral in taste by itself

I made some fresh tortellini for dinner, Introduced a red pepper balsamic, some paprika, flash froze it then tossed it on a bed of romaine and spinach, with some shreaded gouda.

They can get pretty flavorful if you marinate them for a while, although. Not sure it's exactly the same as like.. delicious lamb in a gyro

Out of curiosity, how exactly does the egg help the rice? I know japanese dishes to it, and I tried to emulate it once but it just ended up being a fried egg sitting on a bed of white rice, and the two were just entirely seperate entities.

If you care to learn more:
Gyros is actual pieces of whole meat. Source material is pork, or chicken.
Doner is minced meat and it's either 50 lamb 50 beef, gull beef or chicken.
Both are grilled in vertical spits.

It was just egg in rice. You let the steam of the rice cook the egg. The result is a creamy textured rice with that savory egg flavor.

Pan fried salmon with spinach lemon and dill. Mashed cauliflower on the side.

I'm working on getting a really crispy skin on the salmon - not quite there yet. It was a little undercooked but it went really well with the lemon!

Fried green tomato blt with cajun remoulade, two anissete biscotti, 2 cups of tea, a handful of almonds, a few bites of Greek yogurt, and a spoonful of sour cream.

I'm always really wary of overcooking salmon as I done it once and it was pretty rough. But maybe I'm going too far the other way now.

It's a weird one, I've asked others and it seems a common thing when you first start cooking to be scared of undercooking so you keep the heat too high and burn things or dry them out. It's just fighting that "Ill get food poisoning and die ah!" voice in the back of your head.

Made some scallops with some saffron, served with zucchini noodles with pesto sauce.
Overcooked the scallops by a few seconds but the zucchini were fucking perfect.
Also made some chocolate-rum panna cotta for dessert.

Breakfast was oatz and peanut butter.
