The problem with peas is that most people's first experiences with them are from a frozen bag, which makes them taste terrible. Fresh unfrozen peas are actually pretty good. This goes for most veggies, really. Brussels sprouts are another example.

Peas are the only vegetable where the frozen ones are usually better than the fresh ones. Their shelf life is so short that they get flash frozen within a couple hours of being picked. I believe the source of bad pea childhood memories comes from bad cooking and canned peas, which are truly an abomination.

500g fresh peas from pods
400ml veg stock
200ml full fat milk
80g EVOO
2 large sprigs of very fresh mint
1 tbsp cardamom seeds
250g non smoked gammon

Bring the oil to 70 degrees, add the cardamoms for 3h
Blanche the peas for about 30 seconds (till somewhat tender) in very salty boiling water
Blanche the mint in the same, but for a few seconds
Blitz the infused oil, mint, peas, milk, and veg stock
Season and pass through a chinois
Before serving, pan fry the cooked gammon, in cubes. Garnish with fresh mint chiffonade and colourful flowers
