How do I get these spicy and crispy without a deep fryer?

I have whole thai chilies, korean chili paste, cayenne, flour, and egg yolk.

>mix everything and coat drumsticks
>bake 1h at 390F

>throw them out
>grab some boneless thighs
>pound them out
>bread them using flour with cumen, chili and other spices
>pan fry

will it be dry?

pan fry in hot cast iron pan, finish in oven, toss in spicy sauce or something idk

why would you waste perfectly good, and delicious drumsticks?

im not sure if there is some kind of sarcasm here, but would that not essentially make a pseudo broth considering the got damn chicky bone?

do you have a thermometer that be used in oil? a candy thermometer would probably work.

that's it. that's how you fry chicken without a deep fryer: just use a pot on the stove top

corn starch

kek i use a candy thermometer for oil temp. it was $2 on ebay from china

not if you're using drumsticks

A few minutes under the broiler works for me

thoroughly dust them in baking powder and bake them at 400 until cooked through then toss them in the chili paste

Get a nice sized pan or pot and just fill that fucker with oil. Harder to keep a consistent temperature but it gets the job enough.

doubt any of you are still around but this is what I ended up doing with them

Bake them, finish with a broiler with more sauce, with a little sugar or jam in chili paste, until caramelized and skin is crisped up.

Delicious topping. It reminds me of Yummy House in Sarasota

use the crushed cornflake recipe for your dredge and fry it in a skillet with enough chicken and enough oil to cover the bottom 1/4" deep. There's also an oven version if you want to try that. Spice as you like.

you have to add baking soda
it lowers the temperature at which things get crispy
