What's wrong with organs? Depending on the animal, liver, stomach, intestine, lungs, kidneys etc are perfectly edible and can actually be quite tasty

I was vegan since I was 13, now 27. Progressed through fish and chicken and Im hung up at cattle and larger animals. Recently had venison and bear, beaver too. I want desperately to graduate to liver and kidneys but its fucking hard. Its gross. Factory farmed liver and kidneys are dirt cheap but I feel guilty eating that, as well as disgusted.

The health benefits for liver and kidneys are profound and proven, anyone interested in being healthy and living longer should be eating them but its so damn hard.

I would want to try it cooked properly before I try my hand at it myself, just so I know what I should be trying to do with it.

Factory farmed anything, even most vegetables, is questionable at best. Get to know someone with a farm if you want or have the economy to buy top of the line stuff.

I actually have access to a butcher nearby as well as hunters seasonally who just fucking LOVE to give you their kills.

Sausage would be a good way to incorporate organ meats, do you have any insight into getting a butcher to do sausage with liver and stuff? Is that too weird?

Anyway, after marinating chicken livers in buttermilk and hot sauce, dredge in cornmeal, and deep fry. Tell me them shits ain't delicious.

Pate can be made from pretty much any part of the animal, but liver is frequently one of the parts included in fowl. Foie gras is offal; it's duck or goose liver that's been fattened up through gavage. Duck liver pate made from non-fatty liver is also really common, and though much cheaper, is nowhere near on the level of foie gras.

I don't get why people think this. Do they know what meat is? Why is consuming organ tissue any worse than consuming muscle tissue?

Foie gras is fat liver, literally. Duck and goose have the ability to stockpile fat in their livers before winter (you don't need "unethical" gavage, you can just give them rich food in autumn and kill them as they're about to leave for the south. It's not as effective obviously.)

I eat the inner organs of beasts and fowls with relish.

Growing up we always had the pig hearts split open, stuffed with parsley, trussed up again, and braised for a couple hours in a big cast iron pot. Delicious meat and delicious gravy.
Beefheart is quite good as ground meat. I usually mix it with "normal" meat but you really don't have to.

Fried liverslices with mushrooms and onions. Either with gravy and potatoes or on a thick slice of schwartzbrot or a similar dark rye. Toss the liver in flour with some salt and pepper before frying it.
Liver is great as sausage/pate as well and even if I'm not making an actual liver sausage I'll usually throw a little liver in the mix. You can do that with heart as well.
Growing up I absolutely HATED liver and it was only many years after I left home that I gave it another shot, apart from liverwurst.
Turns out liver is just fine if you don't fry it in margarine for an hour and a half. I had already made a similar discovery with porkchops, which for the first 20 or so years of my life I didn't know could be juicy and tender.

Kidney I don't have so often but I do like a beef kidney when the butcher has them. Fried and served much like the sliced liver or in a nice meat pie. Like the liver you don't want to fry it too much.

I got into organ meats because I grew up eating some of them, mainly hearts and when I moved out on my own I kept buying them because they were also cheap. They're less cheap now but you can still find at least livers and hearts on sale sometimes.
Kidneys, tongues, blood, tripe I only ever see at the butcher's and sometimes not even there. Not much demand I suppose so they probably use most of them in sausages and such.
