I have never tried the cuisine of Niger, but if it's anything like the cuisine of neighboring Nigeria sold here in the United States, you can sign me the frick up!

I've been to Niamey on business a few times, Nigerien food is quite different from it's neighbors, has a lot more in common with Morocco than Nigeria and the French influence seems to be waning, I'd say American frying techniques are becoming a bit more popular. Street food is spicy and served hot almost always, meat is almost always fowl of some kind, quality is hit or miss. It reminds me a lot of Moldova - it has its own dishes but it's close neighbors and former colonizers have influenced it so heavily it just kind of sits in some 'okay' middle ground.

Nigerian food is far better.
