Sous vide grounded beef would be exactly like a normal burger just cooked evenly around it is already as tender as it is going to get from being grinded

sounds bad. burgers get their flavor from the maillard reaction, which you don't get sous vide

except you usually sear sous vide meat afterwards

I have never seen anyone cook hamburgers Sous Vide and then not sear or grill them afterwards, for exactly that reason.
