Dijon is usually finely ground mustard seed. I like the mustard the OP posted too. But Dijon mustard is different. I have several types of mustard in my fridge. Each have their own application.

This mustard is nice. It has its applications. I prefer it in sandwiches when I want a bit of acidity

If I want to add a more mellow but strongly mustardy taste I use wholegrain or dijon.

If I want mustard to eat with roast meat or to mix into sauces I use English which is the most potently mustardy
