I find sauerkraut makes the whole sandwich too soggy, and really brings nothing necessary to the party unless you really really like sour vinegar and fermented vegetables all over your sandwiches.

Pat it dry or saute it first to dry up that liquid a bit. My mom rinses it as do a lot of people who don't like too much of the brine. Or, you can just use the really fresh kraut in the jar that is still fermenting and drain it very well. Give it a squeeze.
