Fun fact. Most "red snapper" in the states is dyed tilapia...trust me. Japanese American and ran the top Asian restaurant in a certain state to know better.

The ginger is just out of frame. The wasabi is mixed into the dish with the soy sauce because that’s how we roll in murrica. I have no problem with our sushi not being jiro tier authentic, but when the fish isn’t the best and the small portions are sloppily put together at mid-high range prices there’s definitely a problem.
