Different people have different taste preferences. Some people may not enjoy the flavor a certain ingredient gives a dish while others will love the flavor it does. People tend to use things like cheddar because it's generally something that people will agree upon so more people will be able to enjoy the dish you cook. If you'd rather a cheese with a stronger flavor because you like the flavor it gives the dish, then fucking do it. If this concept eludes you maybe you should just stick to McDonald's and hotdogs.
