This is a fair question. Who determines what a heretic is among Protestants? Catholics and Orthodox have their respective Churches, and the doctrines and dogma contained therein.

If you're looking for unabashedly Catholic views of history from Catholic writers check out 'History of the Catholic Church' by James Hitchcock, and 'Triumph: The Power and the Glory of the Catholic Church' by H.W. Crocker III. I don't know if he's Catholic but The 'Story of Christianity, vol. 1 & 2' by Justo L. Gonzalez are good books too.

Heretic is a word used in the Bible. So prots can declare another prot a heretic, but there’s no authority to enforce it. For example, Steven Anderson declared Tyler Baker a heretic for being a modalist, but Baker declared Steven Anderson a heretic right back.
