New Balance 998's and the Ultra Boost easy. Plus Superfeet insoles and Balega socks.

If you're on your feet for that long, I recommend getting insoles and possibly socks. For what it's worth, I'm in IT doing 8k-15k steps daily. I hope this helps!

Took me around an hour, probably less, with a box cutter. Use an exacto knife if you have one. You just cut the threads, not the fabric
