No you are wrong; in melee combat you can't afford to open yourself up by trying to grab someone's helmet because that person will just stab you. From time immemorial people have worn outlandish non-functional things into battle for psychological purposes but us moderns have been so removed from the warrior ethos due to the advent of mechanized warfare we tend to dismiss the ritualistic/spiritual aspects of combat which were obvious to previous generations.

A great helm was disposable. You wore it during the charge and then threw it away when you closed with the enemy, relying on your skullcap and coif/low-profile bascinet depending on era to protect you. It was primarily to deflect arrows. After the battle you'd go pick it up again, or just get another made. Great helms were cheap as fuck. Horns, wings, weird headdresses, plenty of adorning features on them because they were disposable and wouldn't affect your actual combat performance.

Better visibility than a kettle hat, same basic principle. Easy as fuck to make in large numbers, fits will with the munitions plate they were making around that time.
