Don't think so, 1.0 is what the game should have been on it's early acess release: a playable game.

Never played Starbound but I'm a huge Terraria player. Always heard about how Starbound was bad and all but didn't it get better recently?

Looking at the recent reviews over steam, everyone seems happy with it compared to, let's say, 1 or 2 years ago.

I'd buy it and try it myself but I'm broke and poor.

At this point nobody really knows, but if you switch to the unstable branch you can play through the whole thing right now

Starbound is playable.
Fun is debatable.
There's glaring mistakes in basic game design (in my opinion, anyways) such as the fact that planets in this game mean exactly fuck and all. After you get off the first one in the first hour or two of gameplay, you basically spend all your time planet hopping from there on out.
There's no incentive to build anything, the building itself is dissatisfying and horrifically resource intensive unless you feel like making do with wood, brick, and stone, so nothing particularly creative can be made without spending hours trying to find the resources/blocks themselves.
The biomes are bland and once you've seen one, you've seen most of them; rolling hills with trees/'trees' on them.
The weaponry and combat are even less satisfying since no matter what they've tried, it's always been either a game of 'whack it until it's dead with no regard for strategy other than 'jump at the right time' or 'hide in a corner chugging health while spraying bullets at the other bullet people.
But maybe some of that's changed. Probably not though.
Still, fun for a few hours, more if you have friends, even more if you're autistic enough to ARPEE.

Terraria has interesting progression even if the hardmode swap and bosses can be frustrating/cheesy as FUCK to some.

Starbound really had none of that for the longest time. No idea what it's like now - there were some bosses, but they all felt detracted and weird. The entire thing feels like a shitty Indie homage to Terraria set in space, with less quality and finesse in all categories. Maybe it's better now, but it sure as shit wasn't for the first long while.

If any of the updates are to be believed, this post basically comes off as old, irrelevant copy pasta now. The only thing I would strongly agree with still is that biomes are still bland, and on a related note cave generation is still uninteresting in this game. I also kind of agree with the comment on combat. I think it's gotten better as compared to before, but that's really not saying much in the end.

Did they fix the fundamental problem of static per-planet difficulty? It basically makes investing long-term in builds totally pointless.

It's actually fucking solid now. Sure, long-term might suffer a lot of issues, but looking back to launch or even just a year ago, it feels like an actual game now. Not some shitty half-baked foundation to an indie game. Gonna play it with my gf while we wait for MHX

If I start playing on the unstable release, is my character going to be inaccessible when it is pushed to the main branch or what?

Essentially yes, since the stable branch is a different "game" from the unstable branch, on steam anyway. Can't say I know for sure about any other versions.
