It doesn't matter when it comes to leveling despite some jobs being technically more suited to it due to fewer positional attacks (e.g. casters and ranged support). Leveling in this game is easy there is zero challenge involved when it comes to solo stuff and usually in dungeons the problem will be other people assuming you're not a retard. With the exception of black mage and possibly lvl 60 bard (?? Not sure don't play it), all of the dps jobs have some mobility. All of the melee have gap-closers. Summoner doesn't need to turret like a black mage.
I think a lot of EU players are on NA realms because they're more populous. You could try Ragnarok, Shiva or Moogle though. Maybe Cerberus but I think that one might be dead. I used to raid with some people who transferred from Ragnarok, which is supposed to be one of the bigger EU servers and they said it was a ghost town compared to Balmung (which is by far the biggest server anyway, but you can't really make a new character there)
