I'm deliberately not entering orbit so that the contracts stay as the lucrative and easy "Hey faggot fly to 40 different locations and use the scientific instruments" contracts that pay me lods of emone for spending 1 hour flying in a big circle around the KSC.

Performing a water takeoff is easy. Aim the craft down into the water at full thrust. It'll happily fly underwater if you do so, and I've gotten the ocean depth records for doing so. Yes with air-breathing engines. They work fine on water too. Once you're underwater, aim the nose at the sky. You'll breach like a dolphin and up you go.
