I personally either use 87 or 93 depending on the car I'm driving, I see no purpose in having 89 and 91 octane.

ATVs are designed to use 89.

My shitbox with 160k miles calls for 87 but had a tendency to ping in hot weather. Changed out the t-stat and started running 89 in the hottest months of the summer, and the pinging practically disappeared

Some cars are designed to run on 89 octane. For example the 2004 Toyota Avalon. 87 isn't enough and 91/93 is wasting money

There are engines that run without knocking on 87, but under load such as accelerating up a hill, there is some knocking that cannot be stopped (compensated for) by that car's computer. It is those engines running on the edge of acceptability of 87 that can use 89. They don't need 91.
