Engineering because it offers literally one thing that allows your belt to offer mobility for moving from fire and Jeeves. Only problem is it's not profitable by any means and is for personal gain, unless you make mounts on the down low.
Jewelcrafting and Enchanting because it allows you to make all those spicy stats and buffs. You can sell the gems and enchants you make an excess of on the AH to other raiders who need to get geared as well.

spec is better than it was in Draenor.

Anyway to your question WW is better in PvP however your main burst is reliant on serenity so you do feel a little cooldown dependent for high damage but you are fairly survivable. However Spriest does a good amount of damage but you don't have many options for keeping someone off of you and getting stunned/interupted during void form will negate a lot of it unless you have dispersion up.

I'd say go WW but Spriest isn't that bad all thing's considered.
