Anyone else like the Wolf Knight Greatsword? It's probably terrible, but I don't do much PvP, and doing a flip before dunking enemies into the ground is hilarious to me, and it makes it tempting to save one last flip for the final hit on bosses. The few times I've pvpd with it, I've done okay.

You can't cosplay a fat deacon, there's no way to get fat enough.
Dark spells don't inherently have int+fth scaling. They are, for all intents and purposes, normal sorceries, miracles, or pyromancies that have a different damage type. It's only the Izalith Staff, Caitha's Chime, and Sunless Talisman that makes dark damage spells get int+fth scaling.
In other words, just take any talisman/chime and dump points into Fth. The difference in damage between you and a specialized int+fth dark build will be less than 30 in their favor. Note, however, that deacons have some dark sorcieries as well, like Deep Soul.

Is it just me or does the PS3's performance deteriorate with age? Every time I play Demon's Souls I get framerate drop in places I don't remember getting them before. But I can't tell whether my console is dying or whether I'm just getting better at noticing it. Just standing around in the area immediately after Phalanx where the dead horses are, I was getting what felt like 10fps.

im pretty sure engines dont work that way and that theyve been using the same engine since DeS with tweaks.
but thats no excuse, DaS had lots of assets from scratch as well. its what they DO as a company that makes new games. i do think that trying to cram so much architecture porn into BB is one of the reasons for all the cut content. All their games up till then have had relatively simple level geometry. Anor Londo was pretty much the pinnacle of architecture in their games.
Even DaS2 had simple architecture, though DaS2 had many OTHER problems

The hub approach works imo because it centralizes your NPCs / Blacksmiths and story functions in the same place so you'll be able to catch people's dialogues if they change.
I think it's also good balancing in terms of having to consider whether you want to press on and risk dying and possibly losing your souls or warp back to the hub to level up.
But it doesn't work properly in DS3 because the distance between the checkpoints is so short.

They used a hubzone in BB and DeS because the idea was to make that the one safe place in the game so they could amp up the stress factor in the overworld. You'll note that DeS and BB don't have bonfires that respawn every enemy on the map.
DaS1 had bonfires as the safety zone, so there was no need for a hubworld. Important NPCs like blacksmiths, merchants, and spell teachers still required you to warp around, but most things could be done from a bonfire. The bonfire system arguably made the game less challenging because you didn't need to prepare everything ahead of time and could just hit a checkpoint halfway through the zone.
Dark Souls 3 uses both systems for literally no reason. It'll also give you a second firekeeper with none of the special functions of the main one and no reason to exist because the first one is literally immortal.

The Souls games are notorious for this. DaS1 re-used a lot of DeS assets, DaS2 reused DaS1 shit, DaS3 reused 1, 2 and BB assets as well as referenced DeS heavily in some areas.

All final areas in all archstones are basically just the boss. 2-3, 3-3, 4-3, and 5-3 are all one tiny walkway and a big boss at the end. 1-2 is a dead-end until you kill one of these archdemons, and 1-4 is the penultimate fight of the game. The whole archstone before an archdemon is the buildup for the archdemon at the end, for the same reason that earlier levels are buildups for the bosses ruling over them.

Your feeling is entirely accurate. The game was mostly developed around the idea of players being able to create a bonfire at any point in an area, using a special corpse that only appeared once in that area and a consumable item. Creating a bonfire like this would've activated the multiplayer like being embered, so the idea was you'd either go through the place alone and set a bonfire right before the boss or set a bonfire early and get summons to help you but have no checkpoint through the rest of it. This item was cut very late in development after being leaked (and confirmed by Miyazaki to have been true), and all the special corpses were just changed to bonfires at whatever places in the area made some amount of sense.

If you're going with the typical 40int/40fth spread for dark casters, the best staff for dark sorceries would be Izalith Staff and the best talisman/chime for dark miracles would be Sunless Talisman and Caitha's Chime. Keep in mind that Cleric's Candlestick is terrible at only 40int, and is meant to be used at 60int.
You can still cast dark sorceries at 60int, in that case just use the best staff for sorcery. You can also still cast dark miracles at 60fth, in which case just use the best talisman/chime. The only advantage 40int/40fth has is the ability to cast both instead of only one or the other.
No, you can't do a dark build as a deacon unless you're willing to give up a whole ton of damage.

Cleric's candlestick doesn't scale with faith. Izalith is the best staff for dark spells, but it's only barely better than just a standard casting tool because dark spell scaling is fucked.
If you want to be 200% Deep, just use the Archdeacon Greatstaff with 60fth. You can cast most pvp-viable sorceries and dark sorceries with only 30int
