Because the old 6.2 liter V8 in the raptor was useless. The previous 3.5 ecoboost made more power and more torque to the wheels while being more efficient. Going to the 3.5 ecoboost, especially the new high output one was a substantial upgrade over the 6.2 V8.
Ford outright cancelled the 6.2 entirely because it had no place when the 5.0 Coyote and the 2.7 and 2.5 ecoboosts exists.

Large displacement was the only way to really make power back then. Then with primitive emissions equipment choking up the motors more displacement was really the only way to make any power.
This is not the 70's. We have small displacement turbocharged engines that make more peak power and more torque at lower rpm than is possible even with a large displacement V8.

also they provide better torque for the MPG that you get which is very important for towing.
