Can you engine break in them or do you have to ride the brakes? Can you leave them in drive when at a stop?

If I'm going down a huge steep hill then obviously I'll drop a gear or two and use the brakes a little, rather than leave it in the gear I was already in and stamp on the brakes.

Brakes, can be left in D at a stop, in P when off. Handbrake up regardless.

Much simpler to operate. You're not going to get any nasty surprises from it.

Often there is a button somewhere to turn overdrive off, which will provide some engine braking for hill descents. Most should also let you shift into 3rd instead of D.

Yes, you can brake to a stop in D. Just remember to hold the brake down, you'll idle forward if you let off. Also handy for when you realize that slushboxes suck and want the car to drive itself over a cliff or into a lake.

Car is pretty old (1997) and I noticed in the users manual (which I read because I'm burning time before tomorrow) it states to put it into N when at a stop rather than leave it in D.
