I'd suggest the Mountain Pass area. We can either fight by the giant bell in the big natural arena surrounded by hills, or put signs on the cliff edge overlooking the Millwood gank and have people fight at the bottom.

Which frostbite weapon is the best? Vodrts hammer and all heavy weapons make me cry in DS3. Should I just use the rapier or is the sword better, does the scythe from the DLC cause frost? I didn't really look don't much care for scythes

I use the +5 Str and Dex rings so I really have 40 in both.

The arena is pretty fun but I don't think it'll replace Pontiffs in the long run. Being unable to choose your fights is a major factor. I'm also tempted to say that it's less accessible than Pontiffs, seeing as you have to get into the DLC and then fight (what is in my opinion) a pretty poor boss in order to access it. Though, after thinking that I then realised that you can actually get the Champion's Bones after just 4 bosses as opposed to Pontiff's 6, and you're going to be about level 60 at the earliest to reach both. Not making Undead Match accessible right from the beginning, or from an item gained in an early game area like Farron Keep, was a silly mistake in my opinion.

The arena also seems to be quite glitchy. I'm getting a lot of invisible people.

Brawl and team game modes are fun though, and at least there's finally solid restrictions on estus beyond 'muh honour.'

I hope this doesn't result in a big split in the community. I haven't been to Pontiff's since the DLC dropped. How's activity there?

Pyro arena is EZ mod compared to sorcery. 7 loses happens only because opponent survives BC with 10HP. New pyroflame will be best choice for duels.
