Amount of reserves depends entirely on how many units you have available. You might wanna garrison the border with 3-4 units so if you have full 5 unit corps then leave 2 on the back ready to respond to places that look weak. If you don't have that many units then you must instead of using reserves just abandon/partially abandon the province while you regain organization. This is the style you will have to use with Russia, falling back to the next defense position and then the next and then the next until the enemy is too overextended to fight.
Doctrines are super important here since they give big bonuses to organization.
AI is up to you, use as much as you see fit. Obviously the optimal strategy is to run at speed 1 and pause regularly and manually control all units but that's probably not desirable. On the other end is automating all units at theather level and using max speed which requires least attention but gives worst results. There is a happy medium in there. For example with France you might want to automate your navy and maybe the border against Italy and focus your attention on the air force and the norther border.
About the troops, remember that each unit you produce is cheaper and faster to produce than the one before it. This means that what ever comps you choose you should stick with them because twice as big of an army of one or two basic types will beat an army that has every possible unit mixed in. That being said there is a time and place for tanks and specialist divisions but build them with purpose.
Also if you ever use tanks get the tank doctrine that reduces their combat widt by 1, it's the best doctrine in the game.

Because at the start of the game I did a serial run of like 8 units and by the time I was done with that I started making tanks and mot divisions which isn't advised from what you're saying.

exactly you should pick a mass produced combo and just have that on repeat till basically infinity. Every time one completes the next one is cheaper and takes less time. And what I mean by this say infantry takes 10 IC/month and 10 months, the next one might be 9 IC/month and 9 months and the repeat after that 8 IC/month and 8 months. You can see how it starts to make a huge difference since not only you get "more" IC to spend right now on other stuff but your stuff also takes less time to make. Numbers I pulled out of my ass obviously but you can see the modifiers in game if you are interested.
Against germans you want some hard attack too so have individual AT regiments in training too which you can attach here and there.

Going tall is interesting. I once played an entire game of EU4 as Frankfurt, without getting ANY provinces. I force-vassalized and fed other countries, mainly Mainz, Hesse and Trier. By the end my 'empire' had about 20 provinces and Frankfurt itself was at 110 development but at that point it was about 600 to increase further.

Rising to power is the most fun part, once you have a solid powerbase (your own kingdom) then just fight a bunch of massive wars I suppose. Some people like to spread their dynasty a lot or sponsor holy orders to make them grow. Go for hard battles like toppling the entire HRE/Byzantines by yourself as a minor kingdom.

I'm not sure exactly if I understand how the top tier ones work.

Is there anywhere explained what "critical hits" do for each tactics by the way? Because the only thing I know about really is that Spearman Rush confuses on a critical hit. Are critical hits from Divine skills still affected by your WAR / ATK etc?

The tradeoff compared to Puissance being that GC not only works with Tactics but also with land regular attack (it's also Exterminate) and Flying General is also Fleetness.
And one more question then would be
how does Stampede (Cavalry tactics attacks cause confuse "vs weak unit") interact with: a) Divine Cavalry / Puissance? b) God's Command / Flying General?
I'm fairly certain that Stampede will always trigger whenever b) triggers as well.

It is said that the "White Riders" enabled Horsebows are stronger / get stronger once you actually research Horsebows. Is that true? How? Furthermore, is there any difference between the Attack power of a Cavalry unit using the Horsebows ranged attack and the same cavalry unit NOT using its ranged attack (which they do automatically for some reason - even if you have Horsebows, they will still use melee if you Attack from meelee range - sounds to me like it would be preferably to choose ranged attack even from melee range just like regular Crossbow units can do)?
