I beat every boss my first playthrough the a great machete I got from the first big dude I killed in undead settlement. My 2nd playthrough all I used was the large club. You just gotta pick your spots. I use ultra weapons for bosses like I am playing monster hunter. I time my charged R2s like a beast.
