We're going to Italy in the spring for two weeks and I want to hit as much car-related stuff as possible. Right now my list is just visiting Ferrari and Lamborghini's museums.
I have a fantasy of walking up to Pagani's factory and running into Horacio and having him take me on a drive in a Zonda, but... yknow, fantasies and all that.

If you want to do car related stuff, you can go to Monza and Imola but I don't know what you can see there (well I mean I don't know if they do trackdays or if you can easily watch a race). Well, the area around Modena is known as "motor valley". There are Ferrari, Lamborghini, Maserati, Pagani each one with its own museum. There are also motorbikes factories like Ducati, Moto Guzzi and Piaggio if you'd take a hit. The northern Italy is also home of many important sites: Milan (Alfa Romeo's museum), Monza (with its racetrack and relative reserve), Tourin (Automobile's Museum).
Of course as said make sure they're open

10/10 experience, at the end of the visit if you go to the museum when the Alfa Romeo dealer is opened (at the end of the tour you will be there just like souvenir shops in other museums) you can see all the new cars and you can test drive them on the museum private track.

Different people have different levels of expectation. Not any of the previous posters (first post in this thread) but a coworker has somewhat low tolerance of dirt, overpricing scams and crime, so his (and his wife's) experience of Rome and Florence (not firenze) were negative for the money spent. One thing mentioned about Rome was how dirty it was. Another was how kids would mob you and while some caught your attention, the others would put their hands where they shouldn't as they look for valuables. Grab and run.
