There is literally zero reason for a Mini Cooper to have 19" wheels.

Stock wheels (related) are 17x7 with 205/40 tires
Pic related is 15x9 with 225/45 tires
I think I'll go somewhere in between. 16x8 with 215/45 would be perfect I think.

That's not how braking works. Bigger calipers wont increase the braking ability past a certain point. Tire grip is what limits braking ability once the brakes are capable of locking up the wheels, which just about any car on the road should be able to do.
