I personally would use a GM LL8 4200 Vortec 4.2L. no aftermarket support but it is an amazing engine. It's also the last great I6 from an American company.

those 300s are torque beasts and in something like a Maverick it could move pretty well with a few mods

or if op does the research on a turbo build it could be a legit fast car
