Will going in the settings from my CFW, turning internet off, then going back to the main menu still keep me in my CFW with everything working? Or will exiting the settings bring be back to the "real" home screen home screen

After you boot your CFW it's perfectly fine to turn off your wifi as long as you don't power down your WiiU since then you'll have to reapply your CFW.
