Hard is only hard early game before you get chips and stuff.
Just start normal and switch to hard later on.
Game gets better.

Will I have to do all of the side quests again? Will they be available in other routes or are the other routes just for the main story?
All the completed sidequests are supposed to stay completed. For some reason Retrieve the Confidential Intel reset for me after ending A.
A few are character specific but most of them can be completed in either A or B.
AFAIK all the A/B sidequests disappear after ending B.

I'm surprised at how much I ended up enjoying them as characters. At first I thought they were lame, typical JRPG pretty boy villains, but I enjoyed their conversations in route B and even started finding them kind of endearing. I almost teared up during the text scene in ending D.

Just finished Five's prologue. That was a mistake. She is just outrageously annoying and shallow. In fact, given the game's tone, I'm a little disappointed they didn't go further with her. She should've talked about wanting to fuck that centaur, or comparing each monster type's dick size.
