The car has most likely a violent input from the steering wheel, so he got to hold on to it like his life which, by the way, is in the line.

That Porsche is holding a very good line through the course. Not whipping it's ass end back and forth like OP.
That's what steering high speed curves looks like inside the car. But those steering inputs keep the car from getting sideways when done properly.

Have you never driven a RWD car in low grip conditions? He's making steering inputs like that to correct for the rear end stepping out.
