I would assume Merc/Commando are the most played as they are the braindead easy classes.

I feel like you don't see many of those Imp side, but I can't really decide on a class for one. I can't see them really being enslaved too much. Thinking maybe agent, since aliens are probably good undercover spies or a bounty hunter, since that could be anything.

Which non Sith/Jedi class feels the most capable in a fight?

I'm going to give it to Smuggler since they seem the best at dealing with force users.

literally any other tech class would be a better option, smuggler is canonically a retard with zero spatial awareness

Since for is just space magic, the answer is those weapons would not be effective. The standard method against force users is to drown them in blaster fire. We have planet eaters so stopping or redirecting a rocket wouldn't be an issue. Flamethrower would be solved with force push.

Depending on their "power level", some have been shown to fling the rockets back at the enemy after catching them with stasis, or slamming the person with enough force to cause the jetpack to blow them up. As for flames, at least at close range, I guess they could "block it" the same way they would with force lightning. Still, that kit would be really hard to fight against. Oil slicks, rocket volleys, Heavy armor, vertical movement, etc

That's sadly a problem with many scenes.
They give you multiple options but expect you to pick the "obvious" one, otherwise you get nothing.
