There is Practice mode and it tells you with nice red "punish" text if you do punish properly, so you can practice there.
Tekken is kinda ass in that for stuff that has short block stun you basically have to press the button early, to buffer it, but for stuff with long blockstun you really need to wait it out and then punish.
So you can't really have just one "I blocked, I press button now with this timing" -reaction.

Anyone know how to do the master raven move where you flip backwards, and then charge up and do a giant leaping flip kick toward the enemy?

I dont see it listed, but I did it once on accident.

Also ive seen a move where she does a really big launching kick off of her all button press power up, but its not listed.

Honestly, blocking is kinda hard in Tekken.
That's, I think, is one of the reason why the backdashcanceling meme is advocated so much. If you scoot out of the way you don't need to deal with high/low/mid bullshit and you have more time to punish.
In theory anyways.

But being able to just duck under 90% of all the moves in the game with Eddy is a huge advantage, especially online.

he sure has sick movement, but as long as you can get a general idea of how to play (what moves are good to use, also when and where) that's good enough. You could also check his juggles of course, but you probably shouldn't worry about maximizing damage at first

alternatively just check his list of 15 best moves, should be enough to have a basic gameplan
