It seems like most hunters did it out of personal need or for the betterment of others (Madaras Twins supported their village in their endeavors), certainly not a job anyone would willingly take.

Are the weapons an integral part of the build, or am I free to use whatever? I've used Whirligig predominantly and want to switch it up with the SteakDriver. I know it would have to be a Str weapon.

What sorta gems should I use for Steak Driver? Would it work 50 STR/25 SKL?

You can use any STR or SKL weapon in the game to great effect. It's generally best to level some VIT and END first before focusing on attack stats, since the scaling doesn't do much until you upgrade your weapons a bit
