Is there an objective playthrough difference between cases with elaborately built evidence and ones with shit thrown together in an hour? I always feel weird reading through former ones' evidence (perhaps from still being used to the early improvs?), but I rarely get to play them, so maybe they do improve the flow.

Well the gameplay isn't all that affected, really. I find that the situation you posed happens a lot more in the "shit thrown together" build due to the fact that it may or may not miss out important details that you might not have seen the first look through.
