Not true. You can strip a car down to the body and essential interior parts like the driver's seat and enough of the dash to have your instruments and lose a lot of weight. The problem is that doing so makes the car undrivable on anything but a racetrack.

I've owned cars ranging from 2000lbs to 4000lbs.
The extra weight is nice for comfort. Less weight usually means more NVH.
If I were going to the track, and wasn't worried about confort, then yeah, I'd use a stripped miata.
But I'm not at the track, and comfort + stability matters to me. So I have my Audi S4 which weighs almost 2 tons. It has enough power to have fun, and the DSG works well in both traffic and back roads.
Weight is important for performance, but weight is also important for comfort.
