Being big doesn't automatically make you slow. Yeah, you can try to 'outmanoeuvre' an enemy that is 5 times larger than you, but realistically this will always end with the small guy destroyed.

I dislike the Highborne themselves being a part of the Alliance, but the intro quests for mages imply they're just now becoming mages. Cata's intro quests for new race+class combos are weird in general, though, so I might just be rambling about nothing. A lot of them imply our characters are just now growing into adulthood and fighting, deciding what class they'll be. It also implies stuff like all our Dwarf shamans and warlocks are young Bronzebeards that were only taught by Wildhammers or Dark Irons. Night Elves can't really have anything like that, because their incredibly long ages mean children and teenagers advancing into adulthood and battle should be sparse and within many years of eachother. A young night elf during Cataclysm only then beginning to fight and deciding to be a mage would be incredibly coincidental.
