Back when I was in thje stance game I just cut my oil pan then rewelded in a sheet of metal and used a low profile jack.

They do make replacement oil pans of steel for them now, it's an aftermarket thing. Even an aluminum skid plate can be added.

Although what year did VW go from a metal oil pan to plastic? Had to be later than the Mk3.
