They're not complaining, it's actually more of bragging. They're literally having a contest of how much they've willingly sacrificed and flaunting it. Others may have lost more but their thing is that they lost it willingly for the sake of a bigger goal.

what professions are worth leveling in 7.3, or just legion in general?

only been playing for about a month and i just picked up mining/herbing on my warrior to put stuff on the ah while leveling and doing wqs. i heard alchemy is good but it seems like everyone and their mother is an alchemist on mal'ganis so i'm not sure if the market is in a good spot.

What the best spec for warlock right now ? For leveling and PvP.

alchemy is only good for money if you have a rank 3 and get lots of procs

The swarm world quest needs to be active, completed or uncompleted doesn't matter, just run in and kill the matriarch to get the hatchling to spawn. But Legion Invasions end and override all active world quest in their zones, don't even get the 15 minutes post ending time you would normally get to complete already started WQs. So it just straight up fucks any side events and quest that happen during them.
