Because the twin turbo V6 hits the objective measures Ford is targeting. This may come as a shock to you, but outright peak power isn't the sole objective engineers target when developing a powerplant for a specific vehicle.
Personally I think the Coyote should be discontinued anyway in all but the more budget half ton pickups. I think the Mustang GT should be an Ecoboost V6 over the V8, although then I guess the GT would suddenly white ant the GT500 sales.

Your seeing cars most likely in rally run them which would be fine where everything is remotely flat and torque isn't the biggest issue the problem comes when you off-road in a truck and are trying to get over, threw or out of stuff and you need that instant low end torque and can't wait for a turbo to spoil to get all your power
Plus the idea of having to spin the hell out of that turbo and have it possibly fail when all you were doing is showing Cletus you could climb that rock
