I mean, you could play a notable Goron who is basically doing shit in the mountains and tunnels and mining and building shit and fighting deep enemies and whatnot, and basically dealing with Ganondorf outside of Death Mountain/in Death Mountain while Link is occupied elsewhere. You may hear rumblings of the Triforce of Courage in some boy or some legend that he's coming but nothing more.

I think they could recreate AoL if they tried, give it some polish. Keep it combat-based, but instead of being a side-scroller it could be 2.5D, or top-down but with a non-locked camera.
