So it takes a fully buffed bladetome Cecilia with Fury 3 to not be hit by Panic Ploy, for Myrrh to not have any RES buffs, for her to not have +HP or +RES for her IV, for her to not be on a fort, and for Myrrh to not have Distant DEF for a sacred seal (although she'll be using Iote's 99% of the time anyways) in order for Cecilia to secure the kill. Otherwise, Myrrh wins.

Playing through Fire Emblem 7 Blazing Sword for the first time and my copy has both Eliwood and Hector mode unlocked already (bought it used at the local game retro game store)

Currently doing Lyn mode since I guess this is the beginning, but which story would you recommend I do after this? Eliwood or Hector? I don't feel like playing through it twice right now, so would rather just play one route atm.

Have other Fire Emblem games to beat, so I'll come back to it later to clear whichever I didn't do.

Well the difference between the two is difficulty. Pick Hector for hard, Eliwood for Normal. Wouldn't make much sense to do Hector first unless you want to just breeze through the story later on.
