Basically I'm going to start by tweaking the mobility options, by putting a shit ton of mobilitiy shit, like kof hops, double jump, wall jump, maybe a short air dash, crawling, dashing like in kof, dashing like SF (diferent input), jump cancel and so on.
That's like my first goal.
Then It'll be adding defensive and offensive options.

To start, dedicated servers are a must. This peer to peer shit is stupid. I gave up on fighting games a while ago because of the shitty online experience.
That said, your image has some truth to it and that too is a reason why games like Smash and DB fighterz are so popular.

Not him but I have less characters. I only play Chun and SFV isn't my main game so I don't really care about having them all.
I haven't settled on any one character. Maybe I'll try to settle on someone like mika. I like urien but charge moves are hard to pull off.

Throw out all notions of "eSports" and just focus on making a quality video game. I strongly doubt anyone in the development rooms of Tekken 3, Mortal Kombat or Street Fighter 2 gave a single thought about tournaments. They just wanted to make a good game, and sold millions for it.

You can't and the same goes for strategy games. The only reason people played those games was because the Internet wasn't a thing and the "positive" effect is twofold.
Firstly, you thought playing in your inner circle of friends/local community that you were actually a good player but now that you can measure yourself against the very best you realize you are shit and most people give up because they know they won't reach that level.
Secondly, everyone you knew was on an even playing field and the games were real contests of skill between people in similar skill levels (ranging from shit to ok) but now if 1 friend decides to look up optimal combos and external help to improve his game it creates an "unfairness" where everyone else either has to accept that inequality or try to keep up and do training of their own but not self imposed "I want to improve myself" but more like having to keep up with a meta because "it's your job". It creates a dynamic of "imposed work" that most other games don't have.
The closest analogy to this I can think of is that scenario where you are playing casual MTG with your friends and one of the decides to netdeck and crush all of you, the dynamic instantly changes.
I still don't get why a new fighting game IP can't design a game without arcade inputs and still retain the depth.
