There is zero chance that europe would have held off the Muslim invasions without christianity. There was no pan-european cohesive ideology/religion that could substitute for christianity. Without it they'd still be a set of squabbling pagans, Byzantanium would still be worshipping the Roman Pantheon and would have gone the way of the Zoroastrians in Iran.
