Muslim don't often convert as conversion and apostasy are sometimes punished. It was easier to convert Africans believing in African religions to Christianity then people who were already Muslim; see places like North Africa where despite being under European rule stayed Muslim and also other places like Somalia.

Middle east is a special case since the people there used to be dominantly Christian until Muslim gradual conversion from 7th-10th century
Thus the people there are more repellent to Christianisation since they already have the established societal rhetoric that makes them convert from Christian in the first place. Traditional ME sects such as Orthodox, Coptics, Armenian Sects do get influenced by Western European theologies though

For steppe niggers, it's nigh impossible.
1. There's not many real cities or towns on the steppe. That means very few schools (one of the best ways to convert people btw, promise them schooling and indoctrinate them with religion). This also means very few places where missionaries can congregate in safety and hold regular services.
2. Steppe culture is largely egalitarian and socioeconomically mobile. A great warrior is a great warrior, no matter his birth. There's no social dynamic that causes them suffering the same way a heavily agrarian economy does (slavery, day laboring, rigid nobility).
3. How can you explain to these people what the significance of a carpenter is? Or a temple? A structure that isn't felt skin over a wicker frame? These are peoples that are totally immersed in nature and out of the context of civilization proper.
4. How can you explain to them that humility and weakness is a virtue? This is an environment where people brutally murder each other for their shoes. Any devout Christians you make, you are sending off to certain death. Your new converts would die off.
