So I was fired by my company a few months ago and I noticed these idiots haven't changed the admin password to their website.

I could easily login (using TOR), change password and email address, destroy all backups and ask for a ransom in BTC.

I know how they work and doing so would cost them a shit ton of money (plus bad publicity). Pretty sure they would pay.

Should I do it? How much should I ask? (they make 25-30 millions € every year)

best case scenario: you generate some business for their IT contractor and the company doesn't do shit about you but rather focuses on a complete security audit, which should've been carried out long ago
worst case scenario: you generate some business for their IT contractor and they decide to put in some time and money towards gathering forensic evidence that may or may not lead back to you
as a recently-fired employee you'd be a prime suspect since there's a clear motive and means to carry out such an attack so don't be a salty idiot
