Probably because Stalinism refers to a specific mode of government. The USSR before Stalin was different, the USSR after Stalin was different, and basically every communist country after Stalin wound up abandoning his method of government (aside from North Korea and Albania).

"Stalinist" isn't a politically correct term. It was coined by Stalin's own disciples (Lazar Kaganovich) in the 1930s as a way to overblow Stalin's contributions to the formation of the USSR

Stalinism itself is used to refer to a system of communist government and allegiance, mainly to differentiate it from conventional marxist-leninism (Post-Stalin USSR/Warsaw Pact, Vietnam, Cuba, etc.) Titoism (Yugoslavia), and Maoist (China, Albania, Cambodia). North Korea's Juche is yet another different type of communist regime, though all 4 can be called marxist and all 4 are interrelated (i.e. Mao was a stalinist until the Sino-Soviet split).

Stalinism itself was strict totalitarian control, a vast police state, and a cult of personality around a central leader with a blend of nationalism, militarism, and emphasis on industrialization. Maosim is extremely similar but with an emphasis on rural/peasantry as the focus of the revolution and treating urban-dwellers and everything associated with it as bourgeoisie on top of extreme isolationism. In truth both movements can only be differentiated if they were allied to Moscow to Beijing (i.e. Barre's Somalia was probably more maoist, yet was allied with the USSR for a time)

Thus it has nothing to do with political correctness, it has to do with system of governance in the post-Khrushchev era and later on who was allied to who in the Sino-Soviet split.
