Ashkenazim can be anywhere between 30 and 70 percent Middle Eastern genetically, and vice versa, anywhere between 30 and 70 percent European genetically, depending on the individual family. It averages out to half and half Euro/Mideast. But most Ashkenazim seem to be in the 60 Mideast 40 Euro range. Ashkenazim and Sephardim cluster very closely together. People talk about AJ clustering with Greek and Sicilian, but they are actually much closer to Sephardim. Sephardim on average are slightly less Euro and slightly more Mideast than Ashkenazis. Sephardim and Ashkenazis both seem to cluster as 'far southern european' on PCA plots, which makes sense given their ancestry. Ashkenazi and Sephardic are also different rites of Judaism as far as I know. Ashkenazi/Sephardic also almost always sits neatly in between Greek/Sicilian and Cypriot/Druze on PCA plots. Realistically in terms of the phenotypes, I'd say Ashkenazi are more likely to look 'depigmented Middle Eastern' and Sephardim are more likely to look 'stereotypical Middle Eastern'.
